Short answer: Almost every LEGO Harry Potter set belongs to one book or film: the Sorting Hat and the Great Hall to the first, the flying Ford Anglia to the second, the Knight Bus to the third. Pick your favourite story first, then whether you want to play or display. For the castle itself there are separate sections and large display models.
The set names are LEGO's; which book a set belongs to comes from our catalogue's theme groups. BricksDeal does not test sets. The age on the box and LEGO's description give the details.
The first book: Philosopher's Stone
Many sets belong to the first story, the year Harry arrives at Hogwarts. Here you will find the Sorting Hat Ceremony, The Great Hall, The Main Tower, Flying Lessons, Charms Class, Potions Class and the Boathouse, all with "Hogwarts Castle:" in the name. Outside the castle are Hagrid's Hut: An Unexpected Visit and Ollivanders and Madam Malkin's Robes from Diagon Alley. For adults there is the Philosopher's Stone Collectors' Edition.
The overview is under Philosopher's Stone.

The fourth to seventh books
There are fewer sets for the later books. Goblet of Fire has Triwizard Tournament: The Black Lake, the second task of the tournament, and the castle's Owlery.
Deathly Hallows has Hagrid and Harry's Motorcycle Ride, Hagrid and Harry's Privet Drive Escape, Malfoy Manor, Luna Lovegood's House and The Battle of Hogwarts. The overview is under Deathly Hallows.
The castle: separate sections or one large model
There are two ways to put Hogwarts on your shelf. The first: the sets with "Hogwarts Castle:" in the name, such as The Great Hall, The Main Tower and the Sorting Hat Ceremony. Each is a section of the castle with minifigures, and LEGO says you can combine them into a larger castle. Hogwarts Castle: East Wing belongs to this series too. That way you build it up step by step, and you can play with it.
The second: one large display model. Hogwarts Castle, set number 71043, and Hogwarts Castle and Grounds are models at a smaller scale, with the whole castle in one set. They are made to display, not to play in.

Collectors' editions and display models
Next to the playsets LEGO makes collectors' editions for adults: large, detailed models of a place from the stories. The catalogue has The Burrow Collectors' Edition, Hogsmeade Village Collectors' Edition and the Philosopher's Stone Collectors' Edition. Smaller display models exist of creatures and objects, such as Fawkes, the Monster Book of Monsters, Dobby the House-Elf and the Mandrake.
